Key Responsibilities
- The Demi Chef de Partie Pastry is responsible for executing production in the Pastry area and stations according to company recipes and presentation, as directed by the Executive Pastry & Bakery Chef or Chef de Partie Pastry. It is also their responsibility to ensure that assigned section recipe files are maintained and available to assigned staff.
- They practice batch cooking and preparation (for soufflés, puddings, crème brûlée, and other pastry items) and demonstrate an ongoing understanding of the ingredient consumption required for daily production in accordance
