We’re hiring: Restaurant General Manager — Italian Restaurant Launch | Hybrid — Medellín, Colombia

We are seeking an entrepreneurial Restaurant General Manager to lead the end-to-end launch and operation of a new Italian restaurant concept in Medellín. In this founding role, you will drive location scouting, concept design, and team building during the pre-opening phase before transitioning into full operational management. If you possess a proven track record of building successful full-service dining concepts from the ground up, this opportunity is built for you.

What you’ll do:
- Lead the location scouting process by evaluating commercial viability, demographics, and foot traffic in Medellín.
- Oversee brand development, visual concept creation, and restaurant interior design with buildout contractors.
- Develop operational blueprints, menu structures, service models,



and vendor/supplier relationships.
- Recruit, onboard, and lead both front-of-house and back-of-house operational teams.
- Manage day-to-day operations, ensuring top-tier guest experience, food quality, and service consistency.
- Oversee restaurant P&L;, controlling inventory, food costs, labor costs, and overall profitability.

We’re looking for someone who:
- Brings
proven experience opening and launching restaurants from concept to operation

- Demonstrates a
strong background in restaurant general management within full-service dining
.
- Maintains
solid expertise in restaurant financials, including P&L; management, food costs, and labor costs
.
- Is
based in Medellín, Colombia and available for a hybrid work model
.
- Shows strong leadership, organizational, and project management capabilities.
